Evidence based from worldwide dietary practice has revealed a marked increase in the consumption of fat and sugar-rich products, which has led to a shift in the morbidity and mortality profile among the population, known as the name of epidemiological and nutrition transitions. An in-depth analysis of the morbidity data and causes of death of the Algerian population from surveys of the 1990s, 2005 and 2012 revealed that Algerians suffer from non-communicable diseases such as high blood pressure, diabetes and cancer. On the other hand, the official statistics published by the National Institute of Public Health on its causes of death revealed that the country is in the midst of a health transition, but in an imprecise manner, hence the lack of data.
